It's been a while since I updated on my meal preps. Here are some of my favourites from my savoury meal experiments lately. The Nasi Lemak was quite a regular feature. We came back from Malaysia armed with some fish crackers from Kuantan. We were having some friends over and decided to try making Nasi Lemak as authentic as possible. We made coconut rice, chicken curry and prepared the accompanying condiments. It was so yummy!
After that, my husband unlocked a new achievement. I had been waxing lyrical about Pak Ali's fried chicken warung-style. He managed to make Malay Fried Spiced Chicken. My sister-in-law said it tastes similar to Ayam Penyet. We made Nasi Lemak a few times more and added sambal as a condiment.

Another regular feature was the flourless pizza made with cauliflower as a base.
I made Tortilla Pizzas with leftover Tortillas- just love the colours!
It turned out really well.
A Pinterest-inspired recipe for Southern baked fish fingers. Panko flavoured with oregano, salt, black pepper and paprika. Served best with mustard.
I also tried my hand at Nyonya chicken rendang.
In Malaysia, I watched an episode of Farmhouse Rules where Nancy Fuller made this sandwich. I had to try it upon our return. Roast chicken, mayo, celery, apple, lettuce and raisins sandwiched between two slices of low G.I. bread. Incredibly refreshing and also yummy.
I made it many times after, sometimes with Rye bread and tomatoes instead.

I have never made macaroni and cheese before so this was the first attempt and it was good.
I had been roasting one chicken a week dividing the parts for various meals. I used the thighs to make a Nandos-inspired dinner. We grilled the roasted chicken to char the skin and then grilled the corn and potatoes.
Salmon with Kale Omelette
Needing to use broccoli and some leftover Stilton up before we went on a trip, I decided try my hand at this. It was so easy and delicious.
Malaysian cravings took over again.
I had many vegetables to use up in the fridge so vegetarian samosas for dinner was a must.
Suddenly had a sushi craving so decided to make Salmon and Avocado Makis.

I've made this many times in the past month. Very popular with the hubby as well especially when served with spicy bird eye chillies. :)
