I decided to try my hand at making red velvet cupcakes but without the artificial red colouring. It took me a while to gather the ingredients because I kept forgetting to write them down. I tweaked them a little to suit what I already have. I also finally found the perfect baking tray. I've always wanted one that is deeper than muffin trays and without the slants on the sides. Then I made cream cheese icing. They turned out superb!
I also had a hankering for claypot chicken rice so I made some. Sadly, I didn't get 'kiam hu' (salted fish) which would have perfected it. However, on the bright side, the fiancee managed to score some birds eye chillies! With some ginger and garlic, it was good to go!
