The first time I had molten chocolate hearts was at Fusion Haven cafe in Sri Petaling. The owner explained to us that this was originally discovered by a French cook by accident. The cakes were taken out before they fully cooked but the customers enjoyed it so much that the cook made it a staple.
I tried making some for new years with some friends using ramekins.
My husband still asks for a repeat of this every once in a while so definitely a win.
Ingredients:
- 25 gm melted butter
- 25 gm cocoa powder
- 200 gm dark chocolate
- 200 gm butter
- 150 gm golden caster sugar
- 4 eggs
- 4 egg yolks
- 200 gm flour
- A pinch of salt
Method:
1. Brush the butter inside the ramekins and refrigerate them.
2. Repeat after ramekins are chilled then add cocoa powder into the ramekins. Tip excess cocoa powder out.
3. Melt chocolate and butter together with a pinch of salt. Leave to cool.
4. Whisk egg and yolks together with sugar until thick and it leaves a trail.
5. Sift in flour and mix.
6. Pour chocolate mix into egg mixture in thirds. Mix well until forms a batter.
7. Pour into ramekins which can be frozen if do not want to use.
8. Put ramekins into preheated oven at 180°C and bake for 10-12 minutes until they come away from the ramekins. Remove and rest for 1 minute.9. Tip them out.
10. Serve with vanilla ice cream.
