Gastronomical Experiments May 2011

Given my love for episodes, I decided to add a new label on my blog for new recipes I try. For other pictures of food I love, check out the Food label-->

Chicken Tikka Masala- Very simple dish- any vegetables you like. I put celery, onions, tomato, mushrooms, potatoes. The spices are the regular- cumin, coriander, paprika, cayenne pepper, chilli flakes, turmeric, cardamom pods and any more Indian spices you fancy. Add some milk to finish off. Lovely.

Tin foil/casserole dish cheesecake: Ying had some leftover cream cheese from my birthday. It was going to expire soon so I decided to bake a cheesecake. Looked into the pantry: NOTHING! No cake mixer, castor sugar, no gelatine, no vanilla, no nothing! Plus, our casserole dish was all we had that was safe to go into the oven. It was so large. Necessity is the mother of invention. I decided to use 2 eggs instead + regular granulated sugar(I didn't have a measuring cup so I just added at whim!) and beat the heck out of it using manual labour. As for the large dish, ta-da!!!J Tinfoil to the rescue! I made it stand against a ceramic mug. I know this from baking ceramic mugs recentlyHigh-five!I I also added hazelnut chocolate swirls.... slightly overbaked but it was nice!

Frittata & Garlic Bread- Got the recipe off a health site. Any vegetables again. I used green and red peppers, onions, tomatoes and mushrooms. Add oregano and basil to the egg mix. Fry the vegetables first and add the egg. When it is half cooked, add cheese and tomato puree/sauce on the top then, close it up to allow the heat to finish off the cooking process. Absolutely good for lunch.

❤ This one was a winner. Fried chicken, sambal belacan and egg. Ying got this recipe off the Internet. He made the chicken without batter and it was amazing. I decided to try it. I added a spiced flour & egg batter to make it crispy. The sambal is improvised due to lack of ingredients- onions, belacan(prawn paste), fish curry paste and seasonings for taste. The chicken was marinated in the usual favourite Indian spices- turmeric, coriander, cumin, paprika etc and seasoned with salt and pepper. The sambal was brilliant!

Miso + seaweed +beefball ramen. Miso goes superbly with beef! Buy some beefmince, miso paste and dried seaweed and you're ready to go! This was amazing as well.
